This port has been described as a wine that is of a similar taste to the deliciously savory pumpkin pie. With its Intense rich fruity nose, filled with bold, dark fruit flavors and notes of spice. I simply extracted a few of these flavors, such as the orange, cranberry, and cinnamon, and accentuated them with the additional ingredients in this concoction.
Fonseca Bin 27 is a blended port that has been around since 1972 when consumers were becoming more knowledgeable and demanding in their choice of wine. Similar to how I would describe the hospitality industry right now. We are at a time where the average consumer is better educated and more discernible with what they like and willing to spend a little more on quality ingredients.
This port is a blend of wines that are matured in large seasoned oak vats, this offers smoothness and complexity to the wine while retaining their intense and vibrant fruit characteristics.
